Beef Guinness Pies
Nothing like warm pies on a cool winter's night! Try this recipe, you can freeze the leftover uncooked pies in plastic and foil. Thaw out before cooking them in the oven.
Organic beef from Kelvin Grove Farmers' markets
1kg diced organic beef
2 sliced onions
A handful of button mushrooms
4 crushed cloves garlic
1 tbs oil
1/3 cup plain flour
400ml Guinness
1 cup of beef stock
Ready-rolled puff pastry
1 beaten egg
Method
1. Brown the diced beef in hot oil. You may coat them with a little flour before frying. Set aside.
2. Cook the onions and crushed cloves garlic in 1 tbs oil until golden. Add the mushrooms. Sprinkle the plain flour and cook for 1 min.
3. Return meat and juices to pan, add 400ml Guinness and the beef stock. Bring to the boil. Reduce heat, simmer for an hour or until tender and sauce has thickened.
4. Preheat oven to 200°C. Spoon beef mixture into eight 250ml ovenproof ramekins. Cut out eight circles of ready-rolled puff pastry to cover. Press firmly onto dishes and seal. Brush with 1 beaten egg, place on a tray and bake for 25 minutes until golden.
Enjoy it with Guinness or your favourite beer!
