Ayam Mentega (Fried chicken with buttery sweet and dark soya sauce)
An Indonesian dish that will tantalise your tastebuds! Ayam mentega means fried chicken pieces drizzled with a concoction of sweet soy sauce, dark soy sauce, lemon juice and butter, yumm!
Ingredients
- 10 pieces of chicken wings (halved) or a mixture of other chicken pieces and wings
- 3 teaspoons of corn flour
- Half teaspoon of rice flour
- Soy sauce
- 1 teaspoon of curry powder
- Chinese rice wine
- Cracked pepper
- Dark soy sauce, Kecap Manis (Sweet soy sauce)
- Lemon juice
- A knob of cooking butter
Method
1. Marinate chicken pieces with a dash of soy sauce, both corn and rice flour, curry powder, couple of dashes of rice wine, some cracked pepper and salt. Set aside.
2. Heat some canola or vegetable oil in a deep frying pan. Fry the marinated chicken pieces until golden brown.
3. While frying the chicken, you may start making the sauce in a small sauce pan.
4. Heat a knob of cooking butter in a small sauce pan, while adding dashes of soy sauce, kecap manis and dark soy sauce. Adjust the amount of these sauces several times while tasting it. Add a few drizzles of fresh lemon juice. A pinch of salt is optional as the soy sauce is sufficient. The sauce should taste tangy and a little salty. Add some cracked pepper.
5. Drizzle the cooked chicken pieces with the sauce, depending how saucy you would like it.
5. Serve with rice and some stir fry Chinese vegetables or some mixed salad. :)
