Tandoori chicken
Fresh from the oven!
Creating meals are all about using your imagination and instincts! Here is a guide for the tandoori recipe, please use or alter the ingredients as you please J
Ingredients
5 chicken drumsticks (marinated with some freshly squeezed lemon juice, salt and cracked pepper to taste)
Two or three pinches (or around a little more than half a teaspoon) of the following:
· Saffron powder
· Turmeric powder
· Cumin powder
· Coriander seeds (pounded or grounded)
· Cardamom pods (pounded or grounded)
· Paprika
3 tsp of curry powder
2-3 tsp of chilli powder
1 tsp of garam masala
1 tsp of garam masala
5 cloves of garlic
1 little knob of ginger (grated)
4–5 tbsp of Greek yoghurt (depends, less or more), generous enough to cover chicken until silky texture
2 tbsp of vegetable oil
Chopped coriander and spring onions for garnish (optional)
You can marinate chicken pieces with spice ingredients overnight for a more intense flavour!
Method
1. Mix marinated chicken with spice ingredients, with garlic, ginger and cover it with yoghurt and vegetable oil.
2. Leave aside for 10-15 minutes.
3. Bake or grill in oven at 180c (fan forced) for about between 30 or 40 minutes until chicken is a little brownish.
4. Serve the chicken with a little squeeze of lemon and garnish it. Serve with raita, rice and other cooked vegetables or lentil.
Ingredients for raita
Mix a bowl of greek yoghurt with some crushed garlic, squeezed lemon juice, chopped cucumber, chopped mint, chopped coriander, a little salt and pepper.
