Prawns and scallops tagliatelle 

Happy New Year, all! Summer is well and truly here, how about serving up some fresh seafood, champagne and a hearty tagliatelle with prawns and scallops? Perfect for an intimate dinner or date night!

Ingredients (Serves 2)
  • Fresh tagliatelle or in a pscket
  • 1/4 cup butter, room temperature
  • Chopped chives
  • Chopped dill
  • Dry white wine
  • Juice of half a lemon
  • Fresh prawns and scallops (big handfuls of each)
  • Minced garlic 
  • Chopped fresh birds’ eye chillies 
  • Olive oil
  • Pepper to taste
Method
  1. Boil the pasta in a pot with salted hot water. Leave aside to cook.
  2. Heat huge saucepan wth a few drizzles of olive oil. Add minced garlic and chopped chillies. Lightly stir for a couple of minutes.
  3. Add scallops and prawns. Stir well and deglaze with some dry white wine.
  4. Add cooked pasta (with kitchen tong) into saucepan. Shake the saucepan and stir.
  5. Add butter (mixed with chopped chives and dill). Toss well.
  6. Drizzle with lemon juice. Add cracked pepper and salt to taste.
