Peruvian-style Roast Chicken
Serves 4
Ingredients
- Spatchcock or 1 whole chicken (just over 1 kg)
- 4 - 6 garlic cloves, crushed
- 1 tablespoon ground cumin
- 2 tablespoon olive oil
- 1 tablespoon paprika
- 1 tablespoon dried oregano
- 1 zest and juice of a lemon
- Salt & pepper
Method
- Mix all ingredients in a bowl. Set aside.
- Pat dry the spatchcock or whole chicken and rub both sides with lemon wedge.
- Create pockets within the main body and drumsticks of the chicken. Rub the spice mix into it.
- Sprinkle some salt over the chicken on both sides.
- Roast 20 minutes in 180 degrees celsius on a skillet.
- Glaze its juices and brush the spice mix over the chicken.
- Repeat this process for every 20 minutes and roast for another 50 to 60 minutes until crispy. Buen provecho!
