Peruvian-style Roast Chicken

Serves 4
Ingredients
  • Spatchcock or 1 whole chicken (just over 1 kg)
  • 4 - 6 garlic cloves, crushed
  • 1 tablespoon ground cumin
  • 2 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 tablespoon dried oregano
  • 1 zest and juice of a lemon
  • Salt & pepper
Method
  1. Mix all ingredients in a bowl. Set aside.
  2. Pat dry the spatchcock or whole chicken and rub both sides with lemon wedge.
  3. Create pockets within the main body and drumsticks of the chicken. Rub the spice mix into it.
  4. Sprinkle some salt over the chicken on both sides.
  5. Roast 20 minutes in 180 degrees celsius on a skillet.
  6. Glaze its juices and brush the spice mix over the chicken. 
  7. Repeat this process for every 20 minutes and roast for another 50 to 60 minutes until crispy. Buen provecho!
