Ayam Panggang Kicap Manis (Grilled chicken with sweet soy sauce)
Serves 4Ingredients
- 1 whole chicken
- 1 cup tamarind water (tamarind pulp soaked in water and strained) or tamarind paste from a jar (add water) OR juice of 1 lemon
- Salt
- 6 tablespoon kicap manis (sweet soy sauce)
- 1 tablespoon sugar
- 8 shallots
- 4 garlic
- 3 roasted candlenuts or handful of macadamia nuts
- 6 long red chillies or 8 dried chillies (soaked in hot water)
- 2 tablespoon white peppercorns
- Cut whole chicken into portions. Marinate with tamarind water or lemon juice, with some salt for at least at hour.
- Blend shallots, garlic, nuts, chillies and white peppercorns in a food processor or blender into a paste with some water.
- Heat 4 tablespoon of butter in a pan. Add blended paste and fry until fragrant.
- Add 650 ml of water, sweet soy sauce and 1 tablespoon of sugar. Mix well.
- Add chicken and simmer for 30 - 40 minutes, turning the meat 2 - 3 times.
- Heat oven. Place chicken pieces on tray, drizzle with sauce from pan.
- Brush chicken with some sweet soy sauce.
- Roast for 10 - 15 minutes in 180 degrees celsius. Serve with sambal belacan.
Sambal belacan
Ingredients- 1.5 inch of belacan block or 2 tablespoon of belacan granules
- 8 long red chillies
- 5 - 8 cili padi (birds eye chillies)
- 2 inch galangal (sliced thinly)
- 4 shallots
- Calamansi juice or juice of 3 - 4 fresh limes
- Salt and sugar
- Toast belacan on a dry pan (low heat) for 2 minutes. Set aside.
- Blend ingredients. Add juice and small sprinkle of salt and sugar.
- Add toasted belacan. Blend until smooth.
- Keep in air tight container for any leftover.
