Red Devil Spicy Sambal Prawns

A scrumptious Baba Nyonya recipe, either fresh quid or prawns can be used!

Ingredients
  • 300g of fresh squid (pan fry to remove excess water from squid) or prawns
  • 100g stink beans (Petai) or green beans
  • 5 tbsp tamarind juice (squeeze tamarind pulp with water)
  • 2 tbsp fresh lime juice
  • 1 large onion slices   
  • Salt and palm sugar (or brown sugar) to taste
Ingredients for blended paste
    • 1 handful of dried red chillies (soak with hot water)
    • 8 red birds' eye chillies (I used homegrown HOT ghost peppers - 2 to 3 pods)
    • 1 large onion
    • 5 shallots
    • 4 garlic cloves
    • 1 - 2 candlenuts (or handful of macadamia nuts)
    Blend or pound these ingredients with a splash of water (from dried chillies) and some vegetable oil, until to a fine paste.

    Method
    1. Pour a generous amount of oil in a work or pan. Sautee your rempah (blended ingredients) until dry or pecah minyak.
    2. Add squid or prawns and other flavouring ingredients such as tamarind, lime juice and little amount of water.
    3. Add in sliced onions, palm sugar (or brown sugar) and salt.
    4. Add beans. Simmer and cover for a few minutes until beans turn bright green, seafood is cooked through. Ready to serve, selamat makan!
