Blueberry muffins
Who doesn't love a blueberry muffin? These muffins can be made in no time and most of the ingredients are probably in your pantry already. All you need are some fresh or frozen blueberries!



Ingredients
    •   375 g or 3 cups of all purpose or plain flour 
    •   1 tablespoon baking powder 
    •   165 g or 3/4 cup soft brown sugar
    •   125 g or 8 tablespoons unsalted butter, melted
    •   2 eggs, lightly beaten
    •   250 ml or 1 cup of milk
    •   185 g or 1 1/4 cups of fresh or thawed frozen blueberries
 
Method
1. Preheat the oven to 170 degrees Celcius. Grease or brush two trays of six 125 ml muffin holes (or a tray of 12) with melted butter. I used Multix cafe style muffin wraps, purchased from the supermarket, so there was no need to grease the muffin trays. 
2. Sift the flour and baking powder into a large bowl. Stir in the sugar and make a well in the centre.
3. Add the combined melted butter, eggs and milk all at once and fold until combined. Do not overmix - the batter should look quite lumpy.
4. Fold in the blueberries. I added a handful of milk chocolate chips, this is optional. Spoon the batter into the prepared tin. 
5. Bake for 20 minutes, or until golden brown. Cool on a wire rack.

Enjoy it warm with a cup of your favourite coffee or tea! These muffins can be kept for a couple of days, you can heat them up in the microwave for about 15 seconds before devouring it :)
