Vietnamese style chicken thigh fillets & Chinese spinach

Protein, lean meat & iron after gym! Vietnamese style chicken thigh fillets & spinach :) 


These lean chicken thigh fillets are perfect after a workout at the gym. Light, fresh, and full of flavour! And fuss free to whip up this dish :)

Ingredients

4-5 fillets of organic chicken pieces
2 stalks of lemongrass (finely chopped, only the white part of the stalks)
2 birds eye chillies, finely chopped
1 small of of ginger, finely grated
3-4 cloves of garlic, crushed
A splash of sesame oil
A dash of fish sauce
2 tablespoon of Chinese rice wine
Cracked peppercorns and salt
A few dashes of vegetable oil, enough to coat the fillets for searing or baking in the oven

Method
1. Combine all the ingredients, and sear the fillets on a grill. You may use some baking paper to cover the grill. This reduces the marinated ingredients from sticking on the grill pan. 
2. If you bake these fillets, lay them on a baking paper on a tray.
3. Once cooked, until a little crispy if you prefer. Serve them with some wilted Chinese spinach.
4. You can stir fry these healthy Chinese spinach (choy sum) or Chinese broccoli (kai lan) or other greens with some heated vegetable oil in a wok, tossed with chopped garlic and ginger. Drizzle them with some Chinese rice wine and some abalone sauce (similar to oyster sauce, but BETTER) and add a few dashes of water.
5. Serve the chicken and greens with some boiled rice (optional) and Bon Appetite!
