Cantonese Chicken Rice Porridge (Congee)

Ingredients (to serve 2)
  • A handful of thinly sliced chicken thigh fillets, pork or fish fillets
  • 3 quarters of a cup of Jasmine rice
  • Sesame oil
  • Chinese rice wine
  • Soy sauce
  • White pepper
  • Sea salt
  • Thinly sliced ginger
  • Shallots, coriander and spring onions
Method
1. Marinate your choice of meat with a couple dashes of sesame oil, rice wine and soy sauce. Add two pinches of white pepper, a pinch of salt.
2. Boil the rice with 3-4 or more cups of water, depending on the consistency preferred. I like it thick with a smooth consistency. Keep an eye on the boiling rice in the pot, with the lid, half closed.
3. Fry some shallots and leave aside.
4. Once the rice porridge is ready, turn to the lowest heat and add the sliced ginger and marinated meat. Stir it until cooked.
5. Add salt or a little soy sauce only if needed.
6. Serve the porridge and drizzle it with the fried shallots with some of its oil. Top it with some chopped coriander and spring onions.
