Fish with appetising Thai marinade


Ingredients
2 whole fish (medium size) or one whole snapper, sliced lightly in the middle for marinade to set in
For the marinade:
One or two handful of coriander leaves or 3 bunches of coriander (the bottom of it, with some leaves)
6-8 cloves of shallots (or more)
1-2 cloves of garlic (optional)
3 or more chillies, chopped
A pinch or two of white pepper and turmeric powder
Half or whole lime, squeezed for juice
A dash of vegetable oil
Some sea salt
Method
1. Blend marinade and pour it evenly on both sides of the fish or you can base it, one side at a time while cooking.
2. Bake fish in oven on 180c until cooked. You can cook on barbeque grill wrapped with baking paper or on hot charcoal grill.

3. Drizzle the fish with some coconut cream and shredded kaffir lime leaves.
